The olives at Tenuta Orzale are harvested by hand with facilitators and nets, to be taken to pressing as early as the same day: pressing in 24 h from manual harvesting! The oil is then stowed in steel drums, unfiltered, then decanted for 2 months and finally bottled.
Golden drops from the last harvest for salads, soups, pasta dishes and main courses of meat and fish.
